Happy Father's Day!

I don't think there are a lot of father's reading my blog but I know that you guys have a father (or father figure) in your life. So happy Father's Day to them!



Let me tell you a bit about my dad...
He's protective of his girls (me, my sister and my mom) in a lot of ways.  With the men in our lives (my sister and I only) he's always looked out for us and only wanted the best guys for us. When it comes to school and career choices he encourages us to do what we love and strive to be happy first. No matter where we travel he'll always check our tires before we go and make sure our car's fluids are okay. He always wants only the best for us and for that I am so thankful.

My dad was anti-trans fats before food distributors had to mark their hydrogenated oils on the nutritional label by government mandate. Before Dr. Oz was talking about high fructose corn syrup my dad was trying to find a shop locally that carried Mexican Coca-cola (it is made with cane sugar). Jamie Oliver wasn't on TV preaching about organic foods when my dad was scouring the grocery store for Horizon Milk. And a grass fed, free range farm was located before most of the population knew they existed. No, my dad is not psychic he is just always looking out for what's best for him and those around him. This is evidenced by the emails with links directing us to the healthiest options and latest breakthroughs. Mildly annoying...sometimes. Thoughtful...always.

So today I've conjured up a great treat for my pops. An entire meal made from scratch. Not a single processed item. Nothing from a box. Every single ingredient is in its natural form first. Organic eggs, free-range chicken, real sugar and fresh veggies grown locally. Here's what's on the menu*:

  • Fresh black bean salsa
  • Gaucamole
  • Chicken Enchiladas (I made the flour tortillas myself!)
  • Homemade Chocolate Icecream
  • From Scratch Dark Chocolate Caramel Bacon Brownies

If I get the chance tomorrow I'll be whipping up some fresh sweet tea (that is how we do it down south) but if not the only "slipup" on the menu will be Dos Equis Lager and Mexican Coca Cola.

I have a feeling my dad will popping by to take a peek at the menu.

*Obviously I haven't eaten these items yet so I'm not sure if they are worth sharing but I sure hope they are. If so I'll pass them along to you guys next week.
